Lomo is a wonderfully tasty air-dried salami of the finest pork loin mixed with a generous helping of delicious fat and seasoned with a combination of fragrant fennel and earthy oregano.  A deliciously distinct addition to our charcuterie range which we know you are going to love.

How To Store 

The Organic Cures Lomo is delivered fresh in an insulated box. They are butchered fresh to order and will arrive with a minimum of a month's shelf life (including the day of delivery). We recommend for these to be stored below 4 degrees.

In 2023, The Organic Cure was founded from a mutual passion for charcuterie between renowned chef Daniel Gavriilidis and organic farmers Harry Boglione & Emily Perry of Devon's Haye Farm. Combining their talents, they craft small-batch, organic charcuterie sourced from Haye Farm's 90 acres of pasture. Here, the farm's organic, high-welfare livestock of beef, sheep, pigs, and chickens graze alongside fruit and vegetable gardens, yielding the finest ingredients for their exceptional range of cured meats.

  • Platter Presentation: Include slices of lomo on a charcuterie board alongside other cured meats, cheeses (like Manchego or aged cheddar), olives, and seasonal fruits (like figs or grapes).
