Our Suppliers

The Fish Society sources the finest quality fish using traditional, sustainable fishing methods. With their 'fresher than fresh' guarantee, they deliver fish that’s not only responsibly sourced but each catch is frozen at peak freshness, ensuring it tastes as good at home as if it were cooked fresh from the sea.

How To Cook

We recommend:

Oven Baking

  • Preheat the oven: Set it to 200°C (180°C fan) or 400°F.
  • Prepare a baking dish: Lightly grease a baking dish or line it with parchment paper.
  • Season the fillets: Drizzle the plaice fillets with olive oil, and season with salt, pepper, lemon juice, and fresh herbs like parsley, dill, or thyme.
  • Bake: Place the fillets in the dish and bake for 10-12 minutes, depending on thickness. The fish is done when it turns opaque and flakes easily with a fork.
  • Optional: For added texture, sprinkle with breadcrumbs mixed with herbs and drizzle with a little more olive oil before baking.

2. Pan-Frying

  • Heat a pan: Add 1-2 tablespoons of oil or butter to a non-stick skillet and heat over medium-high.
  • Season the fillets: Pat the plaice fillets dry and season with salt, pepper, and herbs if desired.
  • Cook the fillets: Place the fillets in the hot pan and cook for about 3-4 minutes on each side, until golden brown and the fish is cooked through.
  • Serve: Remove from the pan and serve immediately.

3. Grilling

  • Preheat the grill: Heat the grill to medium-high.
  • Prepare the fillets: Brush the plaice fillets with olive oil and season with salt, pepper, and herbs. A marinade with lemon juice and garlic can also enhance the flavour.
  • Grill the fillets: Place the plaice on the grill and cook for 3-4 minutes on each side, until cooked through and flaky. Use a grill basket or foil if you’re worried about the fish sticking or falling apart.
  • Tip: Brush with additional marinade while grilling for extra flavour.

4. Steaming

  • Prepare a steamer: Fill a pot with water and bring it to a simmer. You can add aromatics like lemon slices, herbs, or garlic to the water for added flavour.
  • Season the fillets: Place the plaice fillets on a heatproof plate, drizzle with olive oil, and season with salt and pepper.
  • Steam: Place the plate in the steamer basket and cover. Steam for about 6-8 minutes, or until the fish is cooked through and flakes easily.
  • Serve: Serve with a drizzle of olive oil or a squeeze of lemon juice.

Serving Suggestions:

  • Wild plaice pairs well with a variety of sides such as roasted vegetables, potatoes (mashed, boiled, or roasted), or a fresh salad. A light lemon-butter sauce or herb sauce can also enhance the dish.
