With this year’s dry January beginning to feel like a brief blot of regret, it’s time to grasp the opportunity and make up for lost time. Exploring our organic wine cave is always a treat and with our latest pairing suggestions, there’s never been a better moment to experience our wines.

Free from nasty pesticides, additives and chemicals, all of our wines are created the way nature intended. Aside from the clean, crisp and delicious taste this brings, the lack of sulfites also means a fresher head in the morning. Whether you use this as an excuse for an extra glass or three is up to you!

 

What works with White?

Beginning the evening with fizz has always worked well for us. Our Giol Prosecco Frizzante comes to the fore when paired with a light dish to warm up the palette. Try with a grilled vegetable starter, traditional bruschetta or refreshing seafood such as crab cakes or smoked salmon. Another white that adeptly pairs with seafood is the Domaine Philippe Goulley Petit Chablis. Dry and crisp with a vibrant citrus burst that is brought to life alongside fresh white fish such as cod, hake, monkfish and our other wild, sustainably-sourced fish.

If your tastes are more aligned with lighter wines, then look no further than the Chateau Leoube Cote de Provence Rose. We think this one hits the spot when herby, tomato-based pasta dishes are on the menu. A versatile companion, this rose also feels at home alongside soft and creamy cheeses such as Bath soft cheese.

Our divine Chateau Dudon Sauternes is a showstopping treat at any dinner party. Whilst it can be paired with sweet and spicy dishes such as an organic glazed ham, this tipple comes to its forte alongside a rich and sweet dessert. Consider a crunchy crème brûlée, creamy cheesecake or moreish macaroon to help enhance the complex notes of honey, caramel and dried fruit you will discover within this dessert wine.


What works with Red?

Full-bodied and intensely aromatic, our Paul Mas Cuvee Secrete Merlot/Cabernet is one of our favourites due to how well it accompanies our award-winning meats. Sear your organic sirloin steak and sip this special wine for the perfect antidote to a stressful week. If you’ve got your eye on a partner for our organic pork or wild game, then the Walnut Block Nutcracker Pinot Noir is the red of choice. Aromatic with hints of cherry, rich spice and nutty oak, this delicious combination is a surefire crowdpleaser.

A terrific red wine known to get the best out of our range of organic cheddar cheeses is the Novas Carmenere/Cabernet Sauvignon. What’s more, the bright berry blend you experience also pairs well with our hand-crafted charcuterie. We’re thinking the same thing, aren’t we? An organic mezze-sharing platter is in order.
